This book is the author's attempt to cover all things cocoa for the general reader. To that end, chapters are dedicated to the history, cultivation, manufacture and consumption of chocolate. Of particular note is the bibliography provided at the end of "Important Books on Cocoa and Chocolate." Arthur Knapp was a research chemist at Cadbury's and a leading expert in his day.
