Chez Panisse is a Berkeley, California, restaurant, known as one of the inspirations for the style of cooking known as California cuisine, and the farm-to-table movement. Opened in 1971, the restaurant emphasises ingredients rather than technique and has developed a supply network of direct relationships with local farmers, ranchers and dairies. In her first book, Ms. Waters presents 120 of Chez Panisse's inspired transformations of classic French dishes - compiled from the best meals served at the restaurant in the first ten years of its existence, including several of the galas, festivals, and special-occasion meals that have become such celebrated gustatory events.
